Expertly trimmed and rolled, our boneless lamb shoulders are superb slow cooked and packed with flavour.

Hebridean lamb has a unique and distinct flavour making it highly sought after. Our 100% Scottish lamb is sourced from Borland Farm, in the Angus Glens, who are dedicated to naturally rearing high welfare native breeds.

We have a limited stock of this exceptional minority breed meat, so it's first come first served, until stocks run out.

All of our lamb cuts are prepared fresh to order.

This product is supplied raw, packaged in a vacuum pack and labelled with a Use By Date.

As this product is supplied fresh, it is also suitable for freezing, too.

Recipe: Roast Shoulder of Hebridean Lamb Marinaded in Scottish Raspberry Vinegar with Seasonal Veg

This unusual mix of flavours is enriched by the raspberry vinegar – the gravy is exceptional.

It is best to marinade the lamb for a few hours or overnight, so please allow for this time when preparing the recipe.

Ingredients

1 shoulder of Hebridean lamb, bones and rolled - approx 1kg / 2.2lbs
250mls of Summer Harvest Raspberry vinegar
125ml of Summer Harvest Cold Pressed Rapeseed Oil
1 large local carrot, washed and sliced
1 medium local onion, sliced
1 clove crushed Scottish garlic
1 teaspoon of local rosemary
1 teaspoon of local thyme
1 small bay leaf
Salt and milled pepper
Cornflour

Method

Marinade the lamb

Pour the vinegar, rapeseed oil, sliced vegetables, garlic, herbs and seasoning into a non metallic roasting dish – metal will react with the vinegar. Place the mutton shoulder into the marinade and leave overnight. If you can, turn the meat occasionally to marinade evenly.

1. Preheat your oven to 170oC / 325oF/Gas mark 3

2. Drain the shoulder from the liquid and place the meat on a trivet in a casserole dish, pour over the marinade.

3. Roast for approximately 1 hour and 20 minutes – as a rule of thumb lamb should be cooked for 25 minutes per pound and then an additional 25 minutes. Baste every 20 minutes with the marinade.

4. When cooked, remove the meat and allow to rest. Meanwhile pour the juices into a saucepan and allow to stand for a few minutes until the fat comes to the surface.

5. Skim off excess fat, reheat the juices and lightly thicken with corn flour (premixed with water). You may wish to add a little stock to bulk out your gravy.

6. Strain the gravy to a separate from the vegetables – remember to remove the bay leaf.

7. Carve the lamb into slices and serve with your vegetables and gravy, delicious.

Hebridean Lmab Online

We source our Herbridean lamb from Borland Farm in the Angus Glens. This native breed sheep have been reared outdoors all year round without prophylactic chemicals or intensive practices, in a gentle and extensive manner. Their unselective grazing and foraging habits are acknowledged by conservation authorities to enhance the flora on hill ground and therefore improve the habitat for wildlife. Borland Farm's Herbridean lamb have been raised in a traditional manner and have had a guaranteed quality of life. They have been allowed to develop and grow at a rate dictated by nature and the environment

Hebridean sheep, like the wee black cattle of the Highlands (Highland cattle), were numerous in Scotland prior to 1750. However, they were small and thrived on poor grazing conditions. The meat was sweet, but their high butterfat content milk and fine fleeces resulted in them being kept by the Highlanders for their milk and wool rather than their meat.

The highland clearances and introduction of larger sheep breeds, such as cheviot and black-faced led to the near demise of these wonderful sheep. Hebridean sheep are unusually multi-horned, a distinct characteristic that probably saved them from extinction.

The last survivors in the Hebrides were on the island of Uist from which some were taken to Windermere in Cumberland around the 1880s. From there they spread to other stately homes. In this way their survival has largely paralleled that of Highland cattle. The Borland flock has been built around Hebrideans from one such stately home, Harewood House with others from Uist and the island of Lewis.

Borland Farm are dedicated to maintaining their flock of Hebridean sheep to prevent this minority breed from dying out. You can support their efforts by buying their exceptional lamb.

I bought a huge lamb shoulder from you yesterday and cooked it today for a midweek roast. What can I say? Absolutely THE BEST bit of lamb we've had. Crispy skin, tasty fat and melting, soft lamb. Clean plates all round and the best bit? Loads of leftovers for a Biryani, fat for roasties and stock for soup :)
The colour of the lamb struck me when it first arrived. Much darker meat..maybe it's all the heather that they've been enjoying on the hills! Anyway, roasted the joint as normal, and the result was outstanding. We have lamb most Sundays but this Hebridean lamb was really some special! If I could only get my hands on more....

Just add your work address to the delivery address section and add any special instructions like “Tell Dotty on reception to keep her paws off my goodies”.

2. We Can Leave in a Safe Place at Your Home

Just let us know in the Delivery Instructions where you’d like us to leave your box. Our cheery couriers are experts in deliveries to sheds and garages. Somewhere cool and dark is best. Most of our customers choose this option and you must give us a safe place to leave your goods if we are delivering to your home address.

3. We Can Deliver to Your Neighbours

“Neighbours, everybody needs good neighbours”. Do you have a good neighbour who would give a home to your fresh box? Perfect, just let us know in the Delivery Instructions. Goods can are best left in their box until you collect them from your neighbour.

Change of plan and you won’t be around on the day of delivery?

If the goods have been dispatched, our courier will contact you on the day of the delivery. If the goods haven't been dispatched, please contact us on 01241 830 693.

Don’t worry if you aren’t available to pop your fresh goodies in the fridge straight away, our super duper Wool Cool packaging keeps everything nicely chilled for up to 4 days (not that we'll need it!).
