Buck & Birch, Edinburgh

Aelder Elixir has been created by Rupert Waites, head chef and chief forager at the Buck and Birch, in Edinburgh. It was one of numerous wild flavour experiments developed in “The Shed”, having its debut at their very first dining experience in 2012 where it proved to be an instant hit, with diners requesting bottles to take home.

The Buck and Birch restaurant was launched in April 2012 when 12 unsuspecting guests were the first to sample a version of Scottish cuisine. But, as with all these things, the seed of the idea was planted many years before in the Highlands of Scotland and fjords of Norway where the business owners, Rupert Waites and Tom Chisolm, grew up.

This hand crafted drink is produced in small batches from hedgerow to elixir, Aelder is deep, complex, fruity and decidedly moreish. The dark, rich fruit of the Elder is complimented by a host of wild Scottish botanicals and spices, and blended with Scottish whisky to fully enliven the flavour of the foraged berries. The end result is a liqueur that is rich, smooth and complex with a beautifully warming finish.
